The puffed crust is characteristic of Neapolitan pizza, the specialty. Chef Habacuc Pérez has perfected his recipe over the years. He uses sourdough, rests it for 48 to 72 hours, stretches it by hand, bakes it for two or three minutes, and combines a maximum of three ingredients.
